4 large Granny Smith apples, halved crosswise and cored(or Mac's for a softer version)
2 tbsp fresh lemon juice, divided
2 tbsp light or dark brown sugar
1/4 tsp ground cinnamon
1 cup pure maple syrup
1/2 cup chopped roasted walnuts

Preheat oven to 400

Brush cut apples with 1/2 tsp lemon juice.  Arrange apples cut side up, in a baking dish Combine brown sugar and cinnamon in a small bowl, sprinkle cut sides of apples with sugar cinnamon.  Pour maple syrup in the bottom of the dish.  Cover with foil and bake 10 minutes.  Uncover and bake another 15 minutes or until apples are tender Transfer apples to a serving platter Pour syrup and pan juices into a small saucepan, and stir in remaining lemon juice and bring to a boil, cook for 2-3 minutes.  Stir in walnuts, spoon warm over apples
