Watermelon-Berry Colada


You can convert this pretty and refreshing mocktail into a cocktail by adding 1/2 cup (125 mL) white rum. Garnish each glass with a tiny unpeeled wedge of Ontario Watermelon and a sprig of mint.

 

Preparation Time: 20 minutes

                                    Serves 6 to 8

 

2 cups (500 mL)       cubed (3/4-inch/2 cm) peeled Ontario Seedless Watermelon

2 cups (500 mL)       pineapple juice

1/2 cup (125 mL)      unsweetened coconut milk

1/2 cup (125 mL)      fresh or frozen Ontario Raspberries

 

In blender whirl together watermelon, pineapple juice, coconut milk and raspberries.  Pour over ice in tall glasses.

 

Tip:If using a seeded watermelon, remove seeds with the tip of a knife.

Mediterranean Watermelon Salad


This refreshing and colourful salad is bursting with flavour and is easy to prepare. Most of the recipe can be prepared ahead, so you can visit with your guests before dinner.

 

Preparation Time:  20 minutes

                                    Serves 4

 

4 cups (1 L)               cubed (about 1-inch/2.5 cm) peeled seedless Ontario Watermelon

Half                             Ontario Sweet Greenhouse Yellow Pepper, cut in strips

Half                             small Ontario Red Onion, thinly sliced

8                                  black olives, pitted and halved

1/4 cup (50 mL)        olive oil

2 tbsp (25 mL)           fresh lemon juice

1/2 tsp (2 mL)            each paprika and sea salt

1/4 tsp (1 mL)            black pepper

1                              clove Ontario Garlic, minced

1                                  large ripe Ontario Field Tomato, cut in wedges

                                    Ontario Lettuce Leaves or Baby Greens

6 oz (175 g)               Ontario Feta Cheese, crumbled

8                                  large Ontario Basil Leaves, torn

 

In large bowl, gently combine watermelon, sweet pepper, onion and olives.

 

In measuring cup, whisk together olive oil, lemon juice, paprika, salt, pepper and garlic; drizzle over watermelon mixture and gently fold to mix. (The salad mixture can be prepared up to 1 hour ahead and left at room temperature.) Toss in tomato wedges.

 

Line 4 salad plates with lettuce; arrange watermelon mixture on top. Sprinkle with feta, then basil.
