Super Broccoli and Ham Salad

Ingredients
375 ml (1½ cups) |
Piller’s Simply Free® Double Smoked Ham, diced into 5 mm (¼ inch) cubes |
250 ml (1 cup) |
broccoli florets, sliced |
325 ml can |
mandarin oranges, drained |
125 ml (½ cup) |
roasted pepper, sliced |
125 ml (½ cup) |
fresh blueberries |
5 sprigs |
fresh basil, thinly chopped |
60 ml (¼ cup) |
extra virgin olive oil |

Juice of two limes |

Salt and pepper, to taste |
Method
In a large bowl combine all ingredients except lime juice; mix well. Drizzle lime juice over salad; season with salt and pepper to taste.
Grilled Kolbassa Power Salad
Serves 4
Ingredients
375g pkg. |
Piller's Kolbassa, cut into 16 thin, round slices |
500 ml (2 cups) |
fresh kale, chopped |
500 ml (2 cups) |
mixed greens |
250 ml (1 cup) |
Brussels sprouts, thinly sliced |
60 ml (¼ cup) |
fresh basil, finely chopped |
125 ml (½ cup) |
dried cranberries |
Dressing: |

5 ml (1 tsp.) |
roasted garlic |
60 ml (¼ cup) |
fresh lemon juice |
15 ml (1 Tbs.) |
honey |
175 ml (¾ cup) |
grape seed oil |
5 ml (1 tsp.) |
yellow mustard |

Salt and pepper, to taste |
Method
Preheat grill to medium/high. Grill Kolbassa slices to brown slightly on each side. Cut each slice in half and set aside to cool.
For dressing, combine ingredients in small food processor and mix for 30 seconds.
To assemble salad, divide greens onto 4 plates and place grilled Kolbassa on top of greens. Garnish with fresh basil and cranberries; drizzle 60 ml (2 tablespoons) dressing over each salad. Alternately, toss all ingredients together and serve
